Healing chicken soup

Christmas came and went, but so did my family's health 😢 both dave & Jaedyn got a nasty cold right after Christmas. I've felt so bad for both of them. I asked dave what he wanted for dinner one night & he said chicken soup. I was going to make an easy chicken & vegetable soup I've done a lot until I stumbled on this healing soup. I decided this was what we needed since we were on day 5 of being sick. Not sure if this really worked or not but the next day, dave was feeling a lot better then he had. So I'll definitely make this again the next time someone gets the flu. I did double the recipe, used coconut aminos instead of fish oil, and added zucchini noodles.

Taco shepherds pie

I know I made that tex mex casserole a week or so ago but this recipe tasted completely different. For one it has mashed sweet potatoes on top instead of shredded and it also doesn't have parsnips in it & the seasonings are a bit different. Either way it was still really good and really easy to make.

Slow cooker chicken & bacon

Can I just tell you how much I love my crockpot? Whoever invented it is a genius. Have I also ever told you how much I love easy recipes? Well I do and this one couldn't be any easier.  Put chicken in the crockpot. Top with olive oil and seasonings. Then put in the bacon and you are ready to go. It's that easy. I'm warning you now that this will make your house smell so good that you better be gone most of the day otherwise you'll be salivating for a long time. Lol. 

I served this with cauliflower rice and wrapped in lettuce bibs. Then I also had steamed snap peas & green beans on the side.

Yum yum YUM!!! This sauce is to die for. I'm glad I made extra to put on my steamed veggies for later in the week. 😃

Crockpot zucchini lasagna

Oh my. This was the best lasagna I've had since I stopped eating grains. The sauce is made from the yellow squash, onions, and coconut milk. You wouldn't think it would be cheesy but it was. I did top mine with freshly grated Parmesan cheese. My only complaint of this recipe is when you have to ladle out the liquid from the zucchini and put it in a saucepan to thicken it up. Really I'm just lazy and Iike it when I can just come home from work and everything for dinner is all done in the crockpot. But this step isn't hard and doesn't take long and is definitely worth it. Anyway. You should make this now 😃 it's that good.

Tex mex casserole

I know I haven't posted lately. I've been lazy and have been doing a lot of things I've posted already on here 😜 but I'm finally sick of seeing all these web browsers open with recipes, so I'm going to get my favorites posted :) 
This casserole was really easy & super tasty & comforting. The sweet potatoes in this dish really help bring the heat of my taco seasoning down. Plus the parsnips give it a different but tasty flavor from my other casseroles. I highly suggest making this and using the parsnips:)

Ground beef coconut curry

Tonight I was craving curry as well as beef. I needed something easy and fast because I had planned a mommy daughter day for the afternoon. I stumbled upon this recipe and not only was it quick & easy. It tasted amazing. I added about a heaping 1/8tsp of red pepper so it had a little heat but not too much for Jaedyn. Although I did put a little sour cream in hers just in case. The flavors of this is so amazing. I thought when I was stirring the spices in the bowl before adding it to the meat that it would be to overpowering but it wasn't at all. Definitely a keeper for me.

Sweet potato buffalo chicken casserole

All I have to say about this recipe is YUM!! 
The fun thing about this recipe is the flavor can change each time you make it based on how much hot sauce you use and what kind as well as if you do half bbq sauce and half hot sauce like I did. Since Jaedyn isn't fond of spicy foods (what toddler is) I decided to do 2T of buffalo hot sauce and 4T of a sweet bbq sauce. The result was amazing. I wish i could remember exactly which sauce I used but I don't. I do know that it did not have any added sugar in it. It was sweetned with pineapples. 
Anyway this recipe is a definite winner. Need to make it again soon :)

Crockpot shredded tacos

Normally I don't post things unless I have tried them, but when my husband raves about it, I better do it, so I can make this one again. 
The reason I didn't eat this was because I made it for him the day my brother and I left for Arizona. I knew it would make a lot of leftovers which would be perfect for him since I was gone for a week. 
I really can't tell you more then that I followed the recipe to a T and my husband loved it.

Pumpkin waffles

Yes it's another pumpkin recipe. I'm sorry. I love pumpkin & so does Jaedyn. I need easy breakfasts and instead of doing my usual pancakes, I decided to switch things up a bit and go with waffles. I found this recipe and saw that I had everything for it so I decided to try it out. These turned out so yummy. My sitter even had a bite of Jaedyns this morning and loved them. :) the only thing I did differently was instead of the honey I took a medium sized ripe banana and put in a few drops of stevia & it was still yummy.

Easy breakfast sweet potato casserole

I've been trying to change things up lately and wanted to make a large breakfast casserole so I could take it the next few mornings to work. I found this recipe on one of my favorite blogs. Best pancakes ever!!

This last weekend I was down at my mom and dads as we had a very dear family friend, who was more like family, pass away. I wanted to be there to help out as much as I could and one of the ways I know how to do that, is to make food. We had some of the family staying at my moms house so I figured breakfast would help the most. I wanted something easy but also something that had good reviews - my mom had warned me that one of them was pretty picky. The title of this blog post was the best ever pancakes, so I figured how could I go wrong with that. I tasted the batter and decided it was good but needed some vanilla & cinnamon. Then I tasted it again & was amazed at how good it was. The pancakes turned out even better.  Everyone loved them, so much so that they wanted the recipe. So I have to say that their blog post title was correct and this recipe will definitely stay in my rotation. Enjoy!! 😃

Blend (in a blender):
1 cup almond milk
1 teaspoon apple cider vinegar (optional, but helps for rising)
5 large eggs
1/4 cup -packed- almond flour (any brand)
1/2 cup coconut flour
1/2 cup arrowroot or tapioca flour (see note that follows*)
2 tablespoons coconut oil
2 tablespoons honey
3/4 teaspoon baking soda

*i added a 1/2tsp vanilla & cinnamon 

*Flax or chia meal won’t work in place of the arrowroot/tapioca here (I’ve tried). You can use another 1/4 cup of coconut flour in place of the arrowroot/tapioca, but just know that the recipe will not be the same.

To make:
1. Add some coconut oil to a pre-heated skillet.
2. Drop some of batter into the pan. Swirl the batter out with the back of the spoon to make the pancake larger. (I usually make four pancakes at a time in my largest skillet.)
3. Cook each side until pancake is cooked through.

Paleo breadsticks

Well back in the day when I ate bread, the one thing I did love at Olive Garden was there breadsticks. I mean who are we kidding here, we all loved them & ate way more then we should have. 😜
Well if you saw my last post, on that blog, a recipe for breadsticks was linked to it, so I just had to make them. 
These were really easy to make, even rolling & twisting them. Although I'm sure if you didn't want to twist them you could just have single breadsticks.

Paleo Zuppa Toscana Soup

Tonight was supposed to be another cold day so I wanted to make an easy soup. I've never been a fan of Olive Garden, but over the past few years, I've been given a lot of gift cards to there, so Dave and I will go just to get soup and salad. They actually have some pretty tasty soups and have always really liked the Zuppa Toscana so when I found this recipe I knew I had to try it. 
My husband was hesitant because he doesn't like cooked spinach or kale but he actually liked this. I do think next time I do half the red pepper and use coconut milk instead of almond. It was really good but I think coconut milk will make it creamier and that's one thing I love about that soup. 
I did use sweet Italian turkey sausage and not pork but other then that I followed this to the t.

Paleo bacon zucchini red pepper frittata

Oh my goodness was this ever good! I'm so glad my husband decided to have people over to watch the NFL game that was being played in London (7:30am our time) because I may not have discovered this deliciousness that I'm about to share. The key ingredient for this to me is the coconut milk. It gives this casserole a creamy, cheesiness, without any milk or cheese. 
Next time I think I'll sauté some cherry tomatoes and spinach in the bacon fat just to add more veggies to it 😃

Best chili ever!

Today we had a chili cook off at church for our harvest party. I wanted something easy, saw this recipe, and thought sweet just brown the meat, dice an onion, toss in spices & some canned stuff and you're done. That to me is a winning recipe. 😃 I ended up browning the meat then tossing it in the crockpot & setting it on low for 6 hours. 
My chili didn't win even though I thought that it was the best. Had I rendered to take my guacamole, I know that would've topped things off and would've made me first. Oh well. 
The pumpkin adds a nice texture to this and the cocoa mixed in gives it a good flavor. I'm making this again this week because there was none left to have as leftovers and I only had a 1/2 cup of it 😢

Stuffed acorn squash

Tonight I wanted to make a stuffed squash. I had two acorn squashes because did you know Costco sells them right now?? Best thing ever!! 
Anyway found this recipe and it sounded amazing because again his can you go wrong when it has bacon!! Plus I had all ingredients on hand so I didn't have to make an extra stop for ingredients which for me is always a huge plus. 
This recipe was so delicious and we all really liked it. I ended up using ground turkey because that's what I had in hand, as well as Granny Smith apples from my clients tree. Definitely will make this again soon since its squash season.

Pumpkin banana swirl bread

Ok I know, I know. Enough with the pumpkin already. Well I'm sorry you have a whole month until I stop making things pumpkin all the time. 😉
Well on this occasion I had two super ripe bananas but was wanting to make pumpkin bread. I decided to see if there was such a thing as banana pumpkin bread and bam - there was!! 
This thing was amazing. I should've turned it into French toast instead of hogging it all and eating it for my snack and/or dessert.

Super fluffy vanilla coconut protein pancakes

In case you want another snack/pancake recipe or you don't like pumpkin, try this one because it is really good too. 
These turn out so fluffy. I again used my gnarly vanilla whey (which you have to try out because it's not natural with no added crap, its grass fed whey and the taste is amazing!!) 
Anyway the fun thing about these pancakes you can change them up by adding fruit & some other spices or extracts. This just gives you a good base.

Pumpkin spice smoothie

This smoothie is amazing & very filling. In the last week I've made it at least 4 times. Because not only am I obsessed with pumpkin, so is Jaedyn. 
I used liquid vanillacreme stevia as well as light coconut milk & it still was amazing. I'm going to try it with almond milk soon just because it cheaper  then canned coconut milk😜

A side note: use fresh ginger because that makes a huge difference in flavor. If you want to be lazy they sell a tube kind in the produce section by the spices you could use. But trust me, use fresh!

Skillet meatloaf

I was craving meatloaf the other night but didn't want any ordinary meatloaf. I stumbled upon this recipe and I'm so happy I made it. 
We all LOVED this. Dave raved about how good it was. Definitely a keeper in my book. 
I used my fun spiralizer on my sweet potatoes, but you could hand grate these or run it through a food processor to get the same results, but I highly suggest buying one of these because it makes eating veggies fun 😃 and you can make them into noodles and use them instead of pasta.

Pumpkin protein pancakes

Most of you that have been around me have heard me talk about these pancakes. I'm a) obsessed with pumpkin and b) these make the perfect snack so I keep making these. I use my vanilla gnarly protein & don't add the honey. I also use the enjoy life chocolate chips. I never use syrup either. I will eat these plain or topped with a little almond butter.

Butternut squash & beef stew

Tonight was another oops I forgot some ingredients so I made do with what I had. I used ground beef instead of steak as well as onion powder instead of an onion. Dave & I both still liked this but I bet this would've been better had I used steak & an onion. So I'm posting this so I try it again the real way.

Chicken & vegetable soup

Today is a cold, wet, dreary fall day, which to me means: SOUP WEATHER!!! Besides my obsession for pumpkin, I love fall because of all the yummy soups I get to make. 
I wanted one that had lots of vegetables so I chose this one, although really I just added my own veggies & a lot of them, plus the chicken. Then seasoned with the seasonings this recipe called for and adjusted them as needed. I did add all their veggies but probably double the amount and then added roasted cauliflower & broccoli because well I love veggies! 😃

Crockpot zucchini & Parmesan chicken

Like I said before this week was going to be a crockpot week. I had (or so I thought) all the ingredients for this recipe so I decided to make this once I got home from work. My only problem was that I realized after i put jaedyn down for a nap, I didn't have any marinara sauce, so I quickly made one from scratch & it actually turned out really well. The only bummer was my crockpot cooks so high that it became more of a soup, so I put it over top my leftover spaghetti squash
I didn't add any cheese until after observed this. This turned out good but I want to make it again with a different marina sauce.

Crockpot shredded pork over plantain mash

This week was a busy, wet one, so you'll see a lot of crockpot recipes & soups! I found a pork roast in the managers special at smiths so I grabbed it so I could make a pulled pork. I wasn't really feeling bbq pulled pork so I went to one of my favorite blogs in hopes to find a recipe I could make. And sure enough there was one. 😃 the best part about this was it was only a couple ingredients to throw into the crockpot. The only part that would take any time was making the plantain mash. 
I accidentally only bought two plantains and they both were green. I guess I should've read the recipe again before I left the store with my ingredients. Oh well. I just didn't add as much of the liquid and it turned out great. The plantain mash was different but it complimented the pork well. I'm sure it would've been better had my plantains been brown not green.

Paleo sausage, veggie, and egg breakfast casserole

Dave & I have been craving eggs lately, so I decided since he had to get up early & was leading worship, I'd make a casserole. Me being me wanted an easycasserole and something I that I had all the ingredients for. I stumbled upon this one & it definitely did not disappoint. I added extra veggies and more spinach then it called for. I also only had 8 eggs but had egg whites, so I used that for my other four eggs. I actually had to add a little more of that & the coconut milk because all my extra veggies weren't covered by the egg/milk amount the recipe called for. 
One other  thing is I used spicy turkey sausage because that's what I had.
I'm going to make more of this soon because it's easy to grab & take to work with me. Plus Dave raved about this one. 😃

Paleo chocolate chip chia pudding

Lately for breakfast I've been eating some leftover egg casserole and a pumpkin pancake. This means I'm not eating my chia seeds everyday. If you're not familiar with chia seeds, you should look them up because they have lots of benefits. I'd go into detail but I'm lazy now & try to keep these posts short. Ha! 
Anyway... I used to make chia pudding all the time for a snack/dessert, but haven't done it in awhile. Then yesterday while on FB I stumbled upon a post & it sounded sooo good, I just had to make it. If any of you know me, you know that I love coffee & dark chocolate, so this was the perfect snack. Plus not to mention it has protein powder in it which makes it even better! 😃 
Anyway this definitely did not disappoint & totally hit the spot this afternoon. My only problem was that it makes 2 servings & I had a real hard time not eating it all 😃

Chicken enchilada casserole

This dish is more like chicken enchilada sauce dish that you need to serve over something. I put mine over cauliflower rice & Dave over a quinoa/kale mixture. The flavors of this was phenomenal though. :)

Bacon, cherry tomato, spinach quiche.

I've never made quiche before so I wasn't sure how this would turn out, but boy am I ever glad I decided to make. Dave thought there was sausage in it because the sautéed tomatoes in the bacon fat gave off that flavor. Jaedynloved this too. Definitely need to make this again soon & double it so we have more leftovers. 
I didn't use frozen spinach. I just added a huge handful of spinach/kale/chard to it. 
Plus I used 5 eggs & 3 egg whites partly because that's all I had left :)

Zoodles pizza casserole

MeaoLoaf with mushrooms

Slow cooked creole pulled chicken

Today is my split day so I needed an easy crockpot meal. Saw this one & I had to try it. A few weeks ago when I was with my in laws, one of my brother-in-laws busted out this creole seasoning that was AMAZING! I hadn't never seen or used it before then, but decided that once I got home, I had to get some. I kind of forgot about it once I got back to Utah (surprise, surprise) until I found this recipe. Low and behold it called for Tonys creole seasoning so how could I not try it. Both Dave & myself loved the flavor of this chicken. Even jaedyn liked it. It is spicy so I had some milk to her bowl to calm the heat down.

Chipotle chicken cauliflower casserole

Oh boy was this ever good. Even though it's super hot outside, I've been doing a lot of easy casseroles because life has been crazy & they reheat nicely in the oven just before you eat it. 
This one did not disappoint. I added extra veggies like akwYs, plus a half a can of coconut milk to give it more of a sauce. I also roasted my cauliflower with a little olive oil & garlic salt instead of steaming them just because I love them that way. I will definitely will make this again soon because leftovers only lasted a day! Ha!

Father's Day dessert: strawberry rhubarb crisp

One thing Dave misses about Indiana is his moms rhubarb pie. So every chance I can make a special dessert, I try and do something with rhubarb. These little cobbler/crisps turned out sooooo good!! Topped with some coconut whip cream & you have one amazing dessert :)

Father's Day dinner: Bacon wrapped chicken with mushrooms & onions

Mmmm.... Bacon. How can you go wrong there?? :) instead of cutting up chicken breast, I bought chicken tenderloins & then wrapped two pieces with one piece of chicken. Then added a whole container of mushrooms from Costco because we love mushrooms!! This had an amazing flavor & was so easy and quick. I served this with baked asparagus and a baked sweet potato.

Father's Day breakfast

Dave is such an amazing husband & father that even though he had to leave the house around 6:45am, I wanted to get up & make him a special breakfast. Banana bread pancakes

2 recipes of baked oatmeal

We are having guests stay with us tonight and they will be leaving early the next day to go look for a new house. Unfortunately, I have to work early too, so I can't make breakfast for everyone. So I figured the next best thing was to make some baked oatmeal, that they could reheat in the morning. I ended up making two kinds because my friends husband can be kind of picky at times and I wasn't sure if he liked pumpkin or not. I really didn't have any but according to Dave they were both excellent but his favorite was the pumpkin. I would say that the secret ingredient if almond extract helps make it a winner. But he said the apple was really good too. If you're looking to make something for a lot of people, the pumpkin makes at least 16 servings where as the apple only makes 9. 


Whiskey pulled pork

Since I have soccer tryouts tonight, I need something I can throw in the crockpot that is easy for the husband to assemble. We haven't had pulled pork in awhile, so thought I'd make something along those lines. I didn't want just your basic BBQ pulled pork, so when I saw this recipe, I figured I'd give it a try. I know alcohol makes the meat super tender & cooks out, so jaedyn could eat it and be okay. The pork by itself needed some salt, but if you make the whiskey BBQ sauce, then this pork is AMAZING! :)

Paleo chicken tetrazzini

Last night I made the most amazing dish ever!! I wanted to make a casserole so we could have some leftovers and when this recipe popped up, I knew I had to make it. It really doesn't take that long to make - you just have to be patient while the spaghetti squash cooks & the cashews boil. I added a lot of extra veggies, a little more sea salt, and some red pepper flake. We only hVe one more serving left because we just can't stop eating it. :)

Grain free Chicago style pizza

My husband is from Indiana and went to school just outside of Chicago. One of the first places he took me to when I visited him during his masters year was Lou Malnati's. This place is known for their Chicago style deep dish pizzas. We rarely ever have pizza and since I had some free time on my hand and was really thankful for all the hard work Dave has been putting into the house, I decided to make him a Chicago style pizza. I found the recipe for this crust & then added my own toppings of turkey sausage, peppers, red onion, kale, spinach, mushrooms, and broccoli. Plus topped it with some fresh mozzarella  & Parmesan cheese. I used a store bought organic pizza sauce that had no sugar added into it. I also didn't add as much cheese to the crust because I didn't think it needed that much. 
This pizza turned out sooo good!! Dave loved it & so did jaedyn :)

Turkey basil artichoke meatballs

Tonight I wanted some meatballs to go with some asparagus & baked potatoes/sweet potatoes I had made. I didn't want just your ordinary kind of meatball, so when I saw this recipe from paleomg I knew I couldn't go wrong. Super easy & super tasty recipe. 

Garlic butter "noodles" with turkey & broccoli

Tonight I was looking for something quick & easy. I also needed to use some ground turkey & a spaghetti squash. I wasn't really feeling spaghetti & meatballs so the google search was on. I found this one & immediately started craving thebrown butter broccoli at the old spaghetti factory that I used to get when I didn't care about eating healthy. This recipe definitely satisfied that craving & was so easy to make that I'll do it again soon :) 

Chicken enchilada casserole

I know this post is way late as I made this super, delicious meal for cinco de mayo but this was soooo good I have to get this up on the blog so I can find the recipe again. This may take some time to make as you make everything from scratch, but it's well worth it. If you don't have gluten issues then feel free to use your own tortillas which will help save you time, but I promise these tortillas are worth making! :)

Paleo strawberry shortcake

We were having our old landlord over for dinner so he could see the new house & so we could see how he was doing. I wanted something light & easy. I had just bought some huge strawberries from Costco so I thought a shortcake would be nice. I didn't add as much honey as it called for, added more strawberries, and thought they were plenty sweet. Crockpot paleo coconut curry pork stew

Now that title is a mouthful but if it's any conciliation this was super tasty & the perfect thing to eat on a rainy dreary spring day. Plus it's super easy to make. I bought precut squash from Costco, tossed in carrots, placed the pork on top, mixed the sauce together, dumped I to top, and set the crockpot for 6-8 hours. It was that easy!! I love my crockpot :) 
Definitely want to make this again soon. I steamed cauliflower and then mashed it and poured the stew over. I love cauliflower & curry :)

Homemade dairy free ranch dressing

I was wanting to make a ranch dressing to go with the sweet potato fries & chicken tenders I was making for dinner. Plus one of the only ways to guarantee Jaedyn will eat meat is if she has "dip". Doesn't matter what it is, but if she can dip her food in something, most likely she will eat it. Ha! 
She, well we all, loved this one. I wish I had had more time to soak the cashews because I'm sure it would've been less nutty. Either way it was good & I'll definitely make it again :)

Tex Mex Crockpot Carnitas

It's crockpot Tuesday. I was craving Mexican and needed to use a pork roast. So this recipe was just what I needed. The flavors were amazing & this hit the spot. Dave had his in tortillas & I had mine in lettuce wraps.

Paleo sloppy joes

I finally was able to find this recipe again. I made this for Jaedyns birthday but never posted it on the blog. I've never been one for sloppy joes, but I absolutelylove this recipe. I only do 2lbs ground beef & then once it's all cooked, I throw it in the crockpot with 1/2-1 cup of water and then throw it on low for 4 hours. To me, sloppy joes are like chili. The longer it cooks, the better it gets. I served these with sweet potato fries - cut up & peel sweet potatoes, melt a little coconut oil & pour over fries; mix the fries until evenly coated. Add spices of choice (I did half a batch sweet, the other savory) and then bake at 450 for 10 minutes, stir around, and then bake another 10-15 min. They are that easy & that good :) 
A perfect compliment to the sloppy joes along with some steamed broccoli.

Paleo banana mug cake

Today, after my long run, I was craving something sweet. I had seen this recipe & has wanted to try it out. I figured I had some ripe bananas I needed to use, the only sugar added was 1T of maple syrup, so not a lot of sugar, but enoughit would satisfy my sweet tooth. :) plus I figured I needed some potassium, good fat (coconut oil & almond butter), protein (egg & almond butter), sugar (banana & syrup), and carbs (coconut flour & banana) and this satisfied it all. 
It's super easy & soooo good!! Jaedyn loved it too. You definitely could add some nuts or chocolate chips if you'd like. I was just wanting something plain & it was still so good.

Paleo Chocolate Cake w/peanut butter frosting

Dave LOVES reeses peanut butter cups. My original plan had been to make a peanut butter ice cream cake, but with us moving along with everything else, there was just no time. So I decided on the next best thing - chocolate cake with peanut butter frosting. All in all it turned out pretty good. Well the flavor was really good but kind of dry. I was in a hurry & didn't measure exactly, so I think I had too much flour in it. I also had already packed my circular pans, so I made it into a 9x13 and may have over cooked it. I will try it again in the future, but next time as a layered cake.

Roasted green beans

Again I wanted a different kind of side dish to compliment my potatoes & rib eye. Green beans sounded good to me &  since the title said award winning & I know nomnompaleo's recipes are always good, I knew I couldn't go wrong. And boy was I right. Now I was a little hesitant because it had fish sauce, but with the lemon you squeeze on & the seasonings, you couldn't taste it at all. Dave LOVED them and so did I. Garlic mashed sweet potatoes

Oh my goodness. Were these ever amazing. For Dave's 30th birthday dinner, I wanted to have something that complimented prime rib. I also didn't just want abaked potato/sweet potato. Chocolate strawberry crumble

Last week my brother, dad, and myself ran in the striders half marathon. So later that night we thought we'd celebrate by having a big dinner & watch Real as well as the Final Four. Stuffed peppers in tomato soup

Paleo bread

Tonight I was craving French toast, but the only bread I had on hand was honey chia wheat bread - ie not grain or gluten free. Buffalo chicken drumsticks

Cinnamon chipotle burgers

I was craving a burger sooo bad so I wet blog hunting looking for a burger that I had all the ingredients for. Normally I chop veggies & mix in it with the meat, but we were all out, so I needed something fun with a lot of spices. This recipe sounded good, especially topped with sautéed mushrooms & onions with a splash of balsamic. And I was right. These burgers were great! We grilled them & made burgers instead of sliders. We topped these babies with avocado, tomato, the mushroom/onion mix, and Colby jack cheese. Definitely a keeper recipe!

Hidden vegetable meatloaf

I love this meatloaf!!! Such a great way to throw in lots of veggies & not have anyone notice. Although, in my case, we all love veggies, but it's easier to get Jaedyn to eat them. I'm pretty sure I didn't follow this recipe exactly as I probably added more veggies & used ground turkey instead if beef, and this time around, just made one meatloaf instead go mini ones. This prep takes awhile as you have to cook your veggies and then let it cool, but definitely worth the wait. Enjoy!

Crockpot minestrone soup

Even though the weather is getting warmer, the other day we had a cooler, rainy day. Rainy days in my opinion are dreary and that means soup weather! Squash noodles with cilantro pesto

I was craving a spaghetti like dish the other day & stumbled upon this recipe. I decided to do this the night before my 10 mile race to be like my big "pasta" carb dish. I love zucchini noodles & am obsessed with spiraler. I'm telling you, this machine is a great way for kids to eat veggies :) 

The pesto sauce is delicious & I am so happy it made extra so I can top my veggies later this week with it. :) I served this with my baked Parmesan chicken (1/4C fresh parm, paprika, salt, and pepper baked at 400 for 30 min).

Tomato cream chicken sausage "pasta"

I know I made a spaghetti squash pasta dish a few days ago, but I LOVE spaghetti squash & really wanted an easy recipe for chicken sausage. Really this recipe only took like 15 minutes to make, well not counting the time it took to bake the squash. This was super tasty & both jaedyn & Dave loved it. Crockpot pulled pork with a chimichurri sauce

This pork was sooo good. Well the sauce on the pork was. I made this sauce the night before. Cooked the meat on low for 12 hours & then shredded it, added the sauce, then put it in low for 30. So this was a super easy meal & very tasty.

Crockpot chicken fajitas.

Crockpot Friday! It's a super busy day so I needed something I could throw into the crockpot & a few hours later, be ready to eat. Crockpot beef & mushroom stew

This stew was pretty good. I'm now thinking that the onions I use most the time, end up making the flavor taste the same. I really wonder if I would've used the pearl onions, if the flavor would've changed. I also wish I would've added carrots & more mushrooms - yes this is a lot, but they shrink in size & disappear. Plus I love mushrooms! 😃 I did add more sweet potatoe then it called for as well as two small red potatoes. All in all, it was good, and I'd make it again.

Crockpot chicken mole

I've only had mole once at red iguana and LOVED it. I've wanted to try & find a recipe that I could healthify & make at home. Then yesterday I stumbled upon this recipe. For my first attempt, we all liked it, even jaedyn who hadn't been interested in food lately. I didn't have the exact dried peppers the recipe called for and couldn't find the other pepper it wanted so I just used half a jalapeño & I think it turned out great. Definitely will try again, maybe try my hand at a pistachio kind or pumpkin :) (those were my favorites at red iguana)

Creamy chicken cauliflower & broccoli bake

This casserole dish is another AMAZing dish. This sauce was sooo tasty. I added some cream cheese because I needed to get rid of some & thought it sounded good with it. Definitely making again!

This pork is AMAZING!!! This is definitely a recipe that you want to give some time to let the marinade soak into the pork. But after that it doesn't take that long to make :-)

Paleo Mac & Cheese

Spinach artichoke quiche

This quiche was AMAZING!! We added in red pepper, onion, sun dried tomato, and garlic besides the spinach & artichoke. 

Sun dried tomato meatballs

This recipe was a fun way to eat spaghetti & meatballs. Definitely a home run as far as flavor goes. I used an organic marinara sauce from whole foods that had no sugar added. I also added extra sundried tomatoes because I wanted too 😄 

Cauliflower popcorn

Want a fun way to get kids to eat vegetables and really enjoy it? Try this recipe out. 
Jaedyn gobbled down the four kinds I made. I not only did the kind the recipe called for I did one with chili powder and sea salt, another kind with nutritional yeast which gives it a cheddar flavor, and then did a garlic kind. 

Chicken Marsala

This chicken was really good but the mushrooms were even better. A fun way to eat chicken & feel like a fancy chef. 

Amazingly delicious chicken & roasted vegetable soup

This soup does take some time to make unless you buy pre cut squash like I did. If you do that, this soup is easy to make & is soooo good! 

Homemade grain free tortilla chips

This recipe only calls for a few ingredients in a super quick and easy to make. And let's not forget how tasty they are. I usually double this recipe.

Delicious homemade guac

This is super easy to make & is honestly the best guac I've ever had. 

INGREDIENTS

  • 3 ripe avocados, pitted, peeled, mashed
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
  • 1/2 cup chopped onion
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • Ground black pepper
  • Tortilla chips, optional

DIRECTIONS

  1. Mix avocados, drained tomatoes, onion, lime juice and salt in medium bowl until blended. Season with pepper to taste.
  2. Serve with tortilla chips, if desired.



Crockpot turkey veggie chili

Made this for the Super Bowl. Although it doesn't say to put it in the crockpot I did it anyways. I just browned the meat and then chucked everything else in the crockpot and put it on low for six hours. Boy was it ever tasty!
