Hawaiian crockpot chicken

Crockpot Tuesday again. I was wanting something fast that I could chuck in the crockpot that I didn't need to prep - I stumbledon this one & decided it sounded good. I thouroghly enjoyed this recipe. I served mine over steamed cauliflower (Dave brown rice) & also had some steamed snow peas, broccoli, and carrots on the side. :)

Paleo Chocolate Cake w/peanut butter frosting

Dave LOVES reeses peanut butter cups. My original plan had been to make a peanut butter ice cream cake, but with us moving along with everything else, there was just no time. So I decided on the next best thing - chocolate cake with peanut butter frosting. All in all it turned out pretty good. Well the flavor was really good but kind of dry. I was in a hurry & didn't measure exactly, so I think I had too much flour in it. I also had already packed my circular pans, so I made it into a 9x13 and may have over cooked it. I will try it again in the future, but next time as a layered cake.

Roasted green beans

Again I wanted a different kind of side dish to compliment my potatoes & rib eye. Green beans sounded good to me &  since the title said award winning & I know nomnompaleo's recipes are always good, I knew I couldn't go wrong. And boy was I right. Now I was a little hesitant because it had fish sauce, but with the lemon you squeeze on & the seasonings, you couldn't taste it at all. Dave LOVED them and so did I. You better try these & trust me on the fish sauce :)

Rib eye steak

I wanted to find a good marinade or seasoning for my rib eye I had bought for the birthday boy. Found this one & it definitely didn't disappoint. We both really enjoyed the flavor. :)

Garlic mashed sweet potatoes

Oh my goodness. Were these ever amazing. For Dave's 30th birthday dinner, I wanted to have something that complimented prime rib. I also didn't just want abaked potato/sweet potato. When I was looking up prime rib recipes, this one was linked to it. So glad I tried a savory sweet potato mash. It was sooo good. Jaedyn agreed as well and gobbled a ton down. :)

Grain free baked oatmeal

I really wanted to make Dave breakfast for his birthday but knew I had to be to work by 5. So I had stumbled upon this recipe months before & had really wanted to try it. Figured why not make it for his birthday. He loves baked oatmeal - so he should love this. Not sure if he loved it, but he did like it. I really really liked it & is agreat option for a grain free baked oatmeal. Definitely making it again :)

Chocolate strawberry crumble

Last week my brother, dad, and myself ran in the striders half marathon. So later that night we thought we'd celebrate by having a big dinner & watch Real as well as the Final Four. My brother was buying some tri tips from Dons meat so I knew I needed to make some good sides as well as a dessert. This dessert turned ut really good. I was craving chocolate & strawberries so this sufficed both! 😃

Creamy chicken mushroom & roasted cauliflower soup

Oh my gosh is all I can say. This soup was AMAZING!!! I was honestly so sad when I went to eat some leftovers today & realized that my husband had taken it to work for lunch. The soup is that GOOD! I need to make more ASAP!

Stuffed peppers in tomato soup

Ive made this recipe before & I'm not sure if it's on my blog. If it is, too bad because here it is again. 
Loved this creamy tomato soup & when you cut open the stuffed pepper in it & top it with Colby & avocado, you've got yourself a winning combo! :) 
Jaedyn of course downed the soup like it was nothing. Next time I need to double the soup recipe so I have a few days worth of leftover soup. Enjoy!

Paleo bread

Tonight I was craving French toast, but the only bread I had on hand was honey chia wheat bread - ie not grain or gluten free. So I went on the hunt to find me an easy recipe that I could just combine all the ingredients & then throw in the oven. I found this one & I'm glad I did. I had everything on hand & it made really good French toast :)

4 eggs
1 tsp cinnamon 
1/4 C almond milk 
Pinch of sea salt

Microwave paleo bread

I wanted some bread to dip in our soup, but didn't have time to bake any before we ate dinner, so I decided to search the web for microwave bread & found this winner. 
I used coconut oil because that's all I had & they still were yummy. Best part is that it took me all of 5 minutes to prepare & make one for both Dave & myself. :)

Creamy Chicken Tomato crockpot soup

Today the weather is forecasted to be cold & rainy, so the perfect day for soup!! I am headed down to sandy to train my parents so I needed a crockpot recipe. Buffalo chicken drumsticks

Since we are in the process of buying our first house, I am trying to only go to the store every 2 weeks, which leaves me to use things I have put in the deep freeze. I found some chicken drumsticks & decided that some buffalo chicken sounded good. Even better was how easy & quick it was to make this sauce. They turned out really tasty. Not too spicy, but just a little heat. Just how I like it 😃

Paleo Taco Salad

I had a pound of ground beef that I needed to use. I was craving tacos & thus I decided to use this recipe. Turned out just like you would expect - like tacos. I like that I made my taco seasoning from scratch instead of the premade kind. 
I'd definitely make this again when wanting tacos.

Ground beef & zucchini skillet

This recipe was super easy & fast which was just what I was looking for. It also turned out really tasty. Jaedyn loved  the zucchini the best. I used the leftovers on a big spinach & kale salad  the next day & that was even better 😃
