Cinnamon chipotle burgers

I was craving a burger sooo bad so I wet blog hunting looking for a burger that I had all the ingredients for. Normally I chop veggies & mix in it with the meat, but we were all out, so I needed something fun with a lot of spices. This recipe sounded good, especially topped with sautéed mushrooms & onions with a splash of balsamic. And I was right. These burgers were great! We grilled them & made burgers instead of sliders. We topped these babies with avocado, tomato, the mushroom/onion mix, and Colby jack cheese. Definitely a keeper recipe!

Paleo crockpot pumpkin turkey chili

Today i wanted to make a soup as a cold front has come through & my brother in laws who are in town have been skiing all day. I thought that chili sounded like the perfect thing to have. This one lacked a little in flavor so I added some extra stuff at the end as well as some extra veggies :)
In the end, it turned out really good. Isn't my best chili, but definitely hit the spot

Crockpot paleo coconut chicken curry

I was so in the mood for coconut curry, but needed something I could throw in the crockpot & was an easy recipe. This one fulfilled both needs, and of course, turned out super tasty. Definitely making again :)

Hidden vegetable meatloaf

I love this meatloaf!!! Such a great way to throw in lots of veggies & not have anyone notice. Although, in my case, we all love veggies, but it's easier to get Jaedyn to eat them. I'm pretty sure I didn't follow this recipe exactly as I probably added more veggies & used ground turkey instead if beef, and this time around, just made one meatloaf instead go mini ones. This prep takes awhile as you have to cook your veggies and then let it cool, but definitely worth the wait. Enjoy!

Crockpot minestrone soup

Even though the weather is getting warmer, the other day we had a cooler, rainy day. Rainy days in my opinion are dreary and that means soup weather! I'm sad that this winter was very short because I didn't get to make many soups, so I will take advantage of any chance I can to make a soup for dinner. This soup definitely did not disappoint. I used turkey Italian sausage instead of the pork sausage. Dave & jaedyn loved it 😃

Baked Garlic-Mushroom Chicken

I made this recipe other night for my brother-in-law's that are in town. I thought this recipe turned out really tasty and the nice thing about it is there's a lot of leftover mushroom gravy sauce to put on potatoes, eggs, and other types of meat throughout the rest of the week.
Enjoy!

Squash noodles with cilantro pesto

I was craving a spaghetti like dish the other day & stumbled upon this recipe. I decided to do this the night before my 10 mile race to be like my big "pasta" carb dish. I love zucchini noodles & am obsessed with spiraler. I'm telling you, this machine is a great way for kids to eat veggies :)

The pesto sauce is delicious & I am so happy it made extra so I can top my veggies later this week with it. :) I served this with my baked Parmesan chicken (1/4C fresh parm, paprika, salt, and pepper baked at 400 for 30 min).
Enjoy!

Baked Strawberry Donuts

For valentines day, I wanted to make my loves something sweet & special for breakfast. Growing up we use to get donuts for breakfast on special occasions, so I thought this was a great excuse to make them :) they turned out sooo good! Definitely need to make them again.

Easy Mexican Salad

While on our little mini vacation to the cabin, we made this super easy & tasty Mexican dish. I of course added more veggies - like zucchini - because you can never have to many veggies :) if you are looking for something fast, this is a great recipe.

Cheesy chicken skillet - the cheese

This recipe turned out so amazing. Dave commented on it from the very first bite. Jaedyn couldn't get enough of the sauce. I buy nutritional yeast from Good earth, but I'm sure whole foods & sprouts carry it too. These leftovers only lasted one day, so definitely making this again.

Caramel apple pancakes

For national pancake day, I made these tasty ones. I didn't have time for theCaramel sauce, but either way they were good!! Super fluffy & filling :)

Korean beef & veggie noodle bowl

I made this last night for dinner & loved it. Dave loved the flavor but didn't care much for the texture of the noodles. I loved them, so I guess that means more for me :)
