Protein bars

Tonight for dinner I'm not doing much because we are grilling some yummy tri-tip from Dons meat. I've got sweet potatoes in the oven for Jaedyn & myself and Dave can choose between a red potato with a crusted sea salt & garlic crust or have a sweet one with us. Then ill also steam some fresh green beans to finish the dinner off :) So since I didn't have to do much cooking (I did do 4 loads of laundry) to do, I decided to make some protein bars for our upcoming camping trip to Moab. I made two different kinds - one sticky bar and the other a cookie ball. 

Sticky Nut Protein Bar
  • ½ cup all natural nut butter (I used half cinnamon-vanilla hemp sunflower butter & plain sunflower butter)
  • 1 cup water
  • 2 cups Old Fashioned Rolled Oats* (one cup whole, one cup ground into flour)
  • 3 scoops (175g) vanilla whey protein powder (Original recipe called for 5 scoops)
  • ¼ cup almond meal
  • ¼ cup coconut flour
  • ¼ cup unsweetened shredded coconut
  • ½ cup enjoy chocolate chips*
  • 1 tbsp ground cinnamon
  • 1 tsp pure vanilla extract
  • ½ tsp Himalayan Salt
*enjoy chocolate chips are dairy & soy free

INSTRUCTIONS

  1. Grind one cup of rolled oats in the food processor and set aside.
  2. If you are making your own almond meal from slivered almonds, make that now also while your bowl is still dry and clean...
  3. Add nut butter and water to your food processor and process until well blended.
  4. Add oats flour, coconut flour, almond meal, whey protein, cinnamon, vanilla and salt and process until well incorporated.
  5. Add whole oats, shredded coconut and cacao nibs and process until just blended.
  6. Transfer to a 8" x 8" pan that's been lined with parchment paper.
  7. Press the mixture down firmly with a wet rubber spatula until it's all nice and flat, then cover and refrigerate overnight.
  8. Cut into 12 bars and keep refrigerated for up to a week in an airtight container.

After about an hour in the freezer, I cut them and placed each piece on parchment paper and then placed them in the fridge.

TOASTED COCONUT PROTEIN BALLS
Ingredients

1/2 cup vanilla whey
1/4 cup of flaked coconut (try toasting your own!) 1/4 cup of coconut flour
1/4 cup of milk (I used almond)
30 grams melted 85% dark chocolate 

Combine dry ingredients. Then add milk - if its too dry, add a little more milk.  Once all is combined, press into a small container -I used just a square glad tupperwear. Then melt your chocolate & pour over top. Stick in the fridge or freezer for at least an hour. Pull it out & either cut into squares or roll into balls like I did. You could also roll into balls before you melt the chocolate & dip your balls in the chocolate & then stick in the fridge.

Finished product - yes I know. Not pretty. But the taste is what matters :) 
Both bars would be a great post workout snack or even just something to eat in the afternoon Enjoy!
